Any excuse will do!
Sunday is a scrumptious occasion to get the skillet sizzling and start flipping a breakfast the entire family will enjoy (as well as the doggo at your feet catching all the mis-flips directly into her mouth). We’ve got some delicious ideas for pancake day and a fluffy pikelet recipe from Sarah Todd!
Sarah Todd’s fluffy pikelets
INGREDIENTS
1 tsp white vinegar
¾ cup milk
1 cup self-raising flour
¼ cup caster sugar
1 egg
50g melted butter
METHOD
Add vinegar to the milk and set aside to sour.
Sift the flour into a bowl, add the sugar and combine using a wooden spoon.
Create a well in the centre and add the egg and milk mixture. Whisk until smooth but do not over beat.
Cover with cling wrap and leave the batter to rest for about 30 minutes. It will thicken so test the consistency and add more milk if necessary.
Heat a large non-stick frying pan over medium to high heat. Brush with melted butter. Wipe the surface of the frypan with a dry paper towel. This will ensure an evenly coloured pikelet.
Spoon a tablespoon of the mixture into the pan. Use the first pikelet to gauge the temperature; you may need to adjust the temperature up or down. Cook until bubbles form and start popping. Lift the pikelet slightly to check that the bottom is a light golden brown.
You may need to add more butter to the pan between batches. Make sure you wipe the pan with a paper towel before cooking the next batch.
Carefully flip the pikelets and cook for a further 1–2 minutes or until light golden brown.
Remove from the pan and allow to cool.
Top with jam and cream or a topping of your choice.
Easy pancake recipes
In additional to Sarah’s fluffy pikelets, here’s a few more delicious recipes. Serve them with your favourite toppings, such as jam and cream, lemon and sugar, maple syrup, chocolate syrup, Nutella or savouries if you prefer. Have a gluten intolerance or cutting the carbs? The pancake family is incredibly easy to modify by simply switching up the ingredients, such as gluten-free or coconut flour instead of wheat flour; and almond or soy milk instead of dairy. Vegan? Switch the egg for a tablespoon of coconut oil instead. I know, madness! It works.
Easy pancakes

Combine all ingredients and whisk until smooth. Place a frying pan over a medium heat lightly coated with the butter (or oil spray) and pour about ½ cup of batter for each pancake. When bubbles form on the surface, flip the pancake over and cook until golden on both sides.
Mum’s pikelets
INGREDIENTS
1½ cups self-raising flour
¼ tsp salt
¼ cup sugar
1 egg
1 cup milk
50 g butter (or oil spray)
METHOD
Combine all ingredients and whisk until smooth. Place a frying pan over a medium heat lightly coated with the butter (or oil spray) and pour about ¼ cup of batter for each pancake. When bubbles form on the surface, flip the pikelet over and cook until golden on both sides.
French crepes
INGREDIENTS
1 cup (150g) plain flour
1 tsp caster sugar
240ml milk
2 eggs
50 g butter (or oil spray)
METHOD
Combine all ingredients and whisk until smooth. Place a frying pan over a medium heat lightly coated with the butter (or oil spray) and slowly pour just enough batter to lightly cover the entire surface of the pan, tilting as you pour. When bubbles form on the surface, very carefully flip the crepe over and cook until golden on both sides.
Keto pancakes
INGREDIENTS
1½ cups almond meal
2 tablespoons Stevia
½ cup coconut milk or unsweetened milk
2 large eggs whisked
50 g butter (or coconut oil)
METHOD
Combine all ingredients and whisk until smooth. Place a frying pan over a medium heat lightly coated with the butter (or the coconut oil) and pour about ½ cup of batter for each pancake. When bubbles form on the surface, flip the pancake over and cook until golden on both sides. Serve with your favourite keto toppings.
Kid-friendly feast
If you really want to spoil the kids, sprinkle some chocolate chips or blueberries into your wet pancakes immediately after pouring them into the frying pan. Be adventurous! Bananas? Sprinkles? Vegemite?! What a lovely way to spend some fun time with the kids before the busy day begins or spend a lazy Sunday with Jenga or some backyard cricket.
